By David Rocco’s Dolce India 

INGREDIENTS

– 1 onion, finely chopped
– 1 celery stalk, finely chopped
– 1 large carrot, peeled and finely chopped
– 2-3 green chilies, finely chopped
– 1 tsp. chili powder
– 1 cup (250 mL) white wine
– 3 tbsp. (45 mL) tomato paste
– 1 cup (250 mL) tomato puree
– 4 tbsp. extra-virgin olive oil
– Salt, QB
– 5 fresh mint leaves
– 1 lb. (500 g) ground mutton or goat

DIRECTIONS

Heat up a pan and add the olive oil and onions, celery, carrot, chilies, and chili powder, taking time to gently brown your vegetables so the flavors become sweet and intense. Next add in your tomato paste, tomato puree and minced mutton. Give it a good stir and add in a good splash of white wine, Simmer over low heat for about 45 minutes, stirring occasionally. When the sauce is finished, tear up some mint leaves to add to it. Serves 6.
