INGREDIENTS

12 Medjool dates, pitted
1/3 to 1/2 cup blue cheese, such as cambonzola, gorgonzola, Roquefort or Stilton
6 slices bacon cut in half
Handful arugula leaves, for serving (optional)


PREPARATION

Preheat oven to 400 degrees F. Line baking sheet with parchment paper.

Stuff about 1 tsp. of blue cheese into the centre of each date. Wrap with bacon slices. Secure with toothpicks. Transfer to prepared baking sheet.

Bake, turning once, until bacon is golden brown and crispy, about 20 minutes. Serve on bed of arugula, if desired.

Yield: 12 servings.
