Watermelon and Feta Skewers
12 small skewers
12 (1 1/2-inch) cubes of watermelon
12 (1-inch) cubes of feta
12 black olives, pitted

Lemon and Mint Vinaigrette
1 tsp. lemon zest
Juice of 1/2 lemon
1/4 cup olive oil
Sriracha hot sauce, to taste (optional)
1 tbsp. chopped mint
Salt and freshly ground pepper, to taste


Thread each skewer with a watermelon cube, feta cube and an olive onto skewers.

For the dressing: Combine lemon zest, lemon juice, olive oil, sriracha, mint, and salt and pepper. Taste and adjust for seasoning.

Drizzle dressing over skewers and serve.

Yield: 12 servings.
