12 slices of ciabatta, about 1 cm thick

3 × 125 g balls of mozzarella, drained

6 slices of Parma ham

6 ripe figs

Prep & toast the bread: Preheat the grill to medium‑high. Brush both sides of each ciabatta slice with olive oil and place on a baking sheet. Grill for 1–2 minutes on each side until just golden. (Tip: You can grill the bread up to a day in advance and store it in an airtight container to keep it crisp.)

Build the crostini: Preheat the oven to 200 °C (gas mark 6). Slice each mozzarella ball into four pieces. Cut each Parma ham slice in half lengthwise. Arrange each crostino with a piece of mozzarella and a strip of Parma ham on top of the grilled ciabatta.
