1 large English cucumber, sliced
1/2 red sweet onion, sliced
1 garlic clove, finely chopped
Juice of 1 lemon (about 3 to 4 tbsp.)
1/3 cup olive oil
Salt and freshly ground pepper, to taste
1/4 cup chopped dill
1/2 cup crumbled feta


Add cucumbers, red onion and garlic to a bowl. Add lemon juice, olive oil and season with salt and pepper. Toss. Add dill and toss. Sprinkle with crumbled feta on top.

Yield: 4 servings.
