– 4 tbsp. olive oil
– 2 cloves garlic minced
– 1 parsley bunch
– 1 lb. prawns, peeled and veined
– 1 cup white wine
– 2 cups, cherry tomatoes, halved
– 1 tsp. chili flakes
– 500 g paccheri pasta
Over medium heat, sautee your garlic and pepperoncino in extra virgin olive oil. Once the oil has been flavoured up add in your cherry tomatoes and gently sauté. At this point you want to start cooking your pasta, so butta la pasta!
Add your shrimp, parsley, and white wine to the pan and give it a good stir. Let that simmer and when your paccheri is done, mix it together and serve. Serves 4-6.
