Ingredients (Serves 8)
- 5 large ripe plum tomatoes, cut into chunks
- 15 red cherry tomatoes, halved
- 15 yellow cherry tomatoes, halved
- 10 basil leaves, plus 4 for garnish
- 2 garlic cloves, finely chopped
- 8 tbsp extra-virgin olive oil
- 4 × 125g balls buffalo mozzarella
- Salt and freshly ground black pepper
Instructions for Caprese Salad (Insalata Caprese)
- In a bowl, mix the tomatoes with basil and garlic. Season with salt and pepper, stir in olive oil, and let sit for 10 minutes at room temperature, stirring occasionally.
- Divide the tomato mixture among 4 plates, reserving the juices.
- Create a small nest in the center of the salad with a spoon. Place one mozzarella ball in each nest, make a shallow cross-cut on top, gently open it, and insert a basil leaf. Drizzle over 1 tbsp reserved juices.
