This Grilled Stuffed Avocado recipe is a healthy, flavour-packed antipasti from Gino’s official collection. Gino recently discovered that while avocados weren’t typical in Southern Italian cuisine, in Northern Italy they’re used creatively on restaurant menus and this dish reflects that adventurous spirit.
Ingredients (Serves 8)
- 2 large ripe avocados, halved and stoned
- 2 tablespoons extra-virgin olive oil, plus extra for brushing
- 1 large fresh plum tomato, deseeded and cut into 1 cm chunks
- 60 g pitted green olives, drained and roughly chopped
- 2 spring onions, trimmed and roughly chopped
- 1 tablespoon balsamic vinegar
- 1 × 125 g ball of mozzarella cheese, drained and cut into 4 slices
- Salt and freshly ground black pepper
Instructions for Grilled Stuffed Avocado
- Preheat your grill to the highest setting. Brush the avocado flesh lightly with olive oil and grill—flesh side up—for about 3 minutes until just starting to brown. Set aside.
- In a medium bowl, combine the tomato, olives, spring onions, the remaining olive oil, and balsamic vinegar. Season to taste with salt and pepper.
- Carefully spoon the mixture into each grilled avocado half. Top each with a slice of mozzarella.
- Return the avocados to the grill for about 3 minutes, or until the mozzarella just begins to melt. Serve immediately.
