Black Forest Parfaits

About 2 cups jarred sour cherries, reserving juice
1/4 cup cherry brandy
Icing sugar, as needed
Fudgy Brownies or store-bought brownies
1 cup whipping cream (35%)
1 tsp. almond extract
3 1/2 ounces dark chocolate, shaved or grated, preferably 70%
Mint sprigs, for garnishing (optional)


Drain cherries, reserving 1/4 cup of the juices. Add cherries, reserved cherry juice, brandy and icing sugar to a bowl. Toss to combine. Set aside.

Cut brownies into 32 (1-inch) pieces. Set aside.

Whip cream to soft peaks. Add almond extract and sweeten with icing sugar to taste. Set aside.

To each parfait glass: add 4 brownies pieces, some of the cherry mixture, dollop of whipped cream and some shaved chocolate. Repeat layers. Garnish each parfait with a sprig of mint.

Yield: 4 servings.
