INGREDIENTS

2 medium tomatoes, cut into large chunks
1/2 large cucumber, cut into large chunks
1/2 red onion, diced
Handful mint, chopped
Juice of 1 lemon (about 3 tbsp.)
Pinch sugar
1/4 cup to 1/3 cup olive oil
Salt and freshly ground pepper, to taste

PREPARATION

Add tomatoes, cucumbers, red onions, mint, lemon juice, pinch sugar, 1/4 cup olive oil, and salt and pepper to bowl. Toss to combine. Taste and adjust for seasoning. If salad is too tart, add more olive oil.

Yield: 4 servings.
