This Spicy Red Lentil Soup (Zuppa di Lenticchie Rosse) recipe is a quick, warming favourite from Gino’s official collection. It’s a simple one-pot broth with carrots, a gentle kick of chilli, and a fresh finish of chives – perfect when you want deep flavour fast.
Ingredients (Serves 4)
- 4 tbsp extra-virgin olive oil
- 1 red onion, peeled and finely chopped
- 2 large carrots, peeled and cut into 5 mm cubes
- 1.2 litres hot vegetable stock
- 100 g dried red lentils, rinsed and drained
- ½ tsp chilli powder
- 2 tbsp chopped fresh chives
- Salt

Heat the olive oil in a medium saucepan over medium heat. Add the onion and carrots, season with a little salt, and fry for 5–10 minutes, stirring occasionally, until lightly golden.

Increase the heat. Add the stock, lentils and chilli powder and bring to the boil. Reduce the heat and simmer gently for 15–20 minutes, until the lentils and carrots are tender.

Remove from the heat. Transfer about 3 ladlefuls of soup to a jug and blitz with a hand blender until smooth, then return it to the pan and stir to combine.

Ladle into warmed bowls, sprinkle with chives and serve immediately.
