By David Rocco’s Dolce India 

INGREDIENTS

– 1 cup ghee
– 2 tbsp. coriander powder
– 1 lb. rice (preferably Arborio)
– 2 cups yogurt
– 3 tbsp. chili powder
– Water, hot
– Salt

DIRECTIONS

Heat your ghee on medium high heat and flavor with the coriander powder. Add in the rice and stir until the rice is thoroughly coated. Then add in water, a ladle or two at a time, stirring often as though you were preparing a risotto. While you are adding water add in a little salt at a time. Once your rice has reached the al dente stage, add in the yogurt and chili powder and mix thoroughly. Remove from heat and serve. Serves 4-6.
